Ingredients

  • 500 g Potatoes
  • 1 kg pumpkin
  • 2 onions
  • 1 tbsp Olive Oil
  • 3 tbsp sweet paprika peppers
  • 1 l clear vegetable broth
  • 1 tbsp flour
  • 1 bay leaf
  • 1 tbsp finely chopped marjoram
  • Salt
  • pepper (from grinder)
  • 125 g crème fraîche (or QimiQ)

Instructions

    Peel, wash and cut potatoes into wedges or cubes. Peel, core and cube the pumpkin.

    Peel onions, finely dice them and sauté in olive oil until golden yellow. Add paprika, pour in vegetable broth, season with salt and pepper, then add bay leaf and marjoram. Add potatoes and simmer for 10 minutes. Then add pumpkin and cook everything until tender, about 20-25 minutes. Sprinkle the goulash with flour, stir well and bring to a boil again; finish with crème fraîche (QimiQ) and serve garnished with marjoram.
