Potato-Carrot Patties

Ingredients

  • 200 g potatoes
  • 2 carrots
  • 1 onion
  • 1 bunch parsley
  • 2 Eggs
  • 4 tbsp flour
  • 1 tsp salt
  • black pepper
  • butter for frying

Instructions

    Wash, peel, and grate the potatoes coarsely. Drain in a sieve and pat dry with paper towels. Grate the carrots finely and dry them similarly.

    Peel the onion and dice it small. Wash and shake off excess water from the parsley, then finely chop the leaves. Mix onion and parsley in a bowl. Add eggs, flour, grated potatoes, and carrots; stir well. Season with salt and pepper. Preheat the oven to 80 °C.

    Heat a little butter in a large non-stick pan. For each patty, spoon 2–3 tbsp of the mixture into the pan and flatten it. Fry for about 7 minutes on each side until golden brown and crisp. Remove and keep warm in the preheated oven while you prepare the rest.
