Grilled Fish and Seafood

Ingredients

  • 4 Calamari
  • Salt
  • 400 g mussels
  • 10 large shrimp
  • 600 g salmon fillet
  • 2 Spring Onions
  • 1 Garlic clove
  • 1 tbsp hot mustard
  • 1 tsp curry powder
  • 2 tbsp Lime juice
  • 50 ml olive oil
  • Salt
  • Cayenne pepper
  • 800 g tomatoes
  • 2 small onions
  • 3 Garlic cloves
  • 1 Tbsp clarified butter
  • Salt
  • pepper (ground)
  • chili powder

Instructions

    Wash the calamari and blanch in boiling salted water for about 1 minute. Remove and drain. Wash mussels under running water, remove beards, discard open shells, remove upper shell halves. Split shrimp lengthwise and devein. Rinse and pat dry. Cut salmon fillet into four equal pieces, rinse and pat dry.

    Wash, trim, and finely chop spring onions. Peel and crush garlic. Mix both with mustard, curry, lime juice, and olive oil. Season with salt and cayenne pepper. Brush calamari, shrimp, mussels, and salmon with the mixture and marinate covered for at least 1 hour.

    For the salsa, blanch tomatoes, shock, peel, quarter, and roughly chop flesh. Peel onions and garlic cloves and finely dice. Sauté in hot clarified butter until translucent, add tomatoes and simmer about 8 minutes. Then pour in about 80 ml water, season with salt, pepper, and chili, and reduce to a thick sauce for about 20 minutes.

    Preheat grill and remove seafood from the marinade, letting them drain. Grill calamari for about 8 minutes turning halfway through. Grill salmon fillets and shrimp about 6 minutes and mussels about 5 minutes. Brush with marinade occasionally while grilling.
