Ingredients
- 1 chicken (approx. 1.2 kg)
- 2 cloves garlic
- 2 red chili peppers
- 2 tbsp Jerk spice mix
- 2 limes (juice)
- 20 ml rum
- 1 tbsp honey
- 2 tbsp butter
- 800 g small potatoes
- lime wedge (for garnish)

Wash the chicken, pat dry and cut into 8 pieces. Peel the garlic and slice it thinly. Wash, deseed, and finely chop the chili peppers. Mix both with the spice blend, lime juice, rum, and honey; coat the chicken pieces well and cover. Marinate in the refrigerator overnight for best flavor.

Preheat the oven to 200°C (400°F) with fan or conventional heat.

Melt the butter. Drain the chicken pieces and combine them with the washed potatoes on a baking tray. Drizzle with melted butter and bake for 35-40 minutes, turning occasionally and brushing with the remaining marinade.
