Ingredients

  • 400 g starchy potatoes
  • Salt
  • handful arugula
  • 1 tbsp Lemon Juice
  • 50 g goat hard cheese
  • soft butter (for molds)
  • pepper (ground)
  • nutmeg
  • 12 eggs size S

Instructions

    Wash the potatoes and boil them for about 20 minutes in salted water. Drain, let steam off, peel and cool.

    Wash the arugula, rinse and dry with a towel. Roughly half of it with lemon juice in a blender and puree. Grate the cheese and mix in. Roughly chop the remaining arugula and fold into the mixture.

    Preheat the oven to 220°C (425°F) with upper and lower heat and butter the depressions of a muffin tin.

    Grate the cooled potatoes and combine with the arugula-cheese mixture. Season with salt, pepper and nutmeg and fill the molds. Press lightly in the center and crack one egg into each. Sprinkle more pepper, season again and bake for about 20 minutes.
