Portuguese-Style Fish Stew

The Portuguese-style fish stew from Spoonsparrow is guaranteed to be a hit and brings a generous portion of protein to the table.

Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 2 tsp Olive oil
  • 2 stalks leeks
  • 200 g carrots
  • 500 g Potatoes
  • 0.5 untreated lemon (zest and juice)
  • 6 peppercorns
  • 6 coriander seeds
  • 3 bay leaves
  • 400 g canned tomatoes
  • 600 ml fish stock
  • 150 ml dry white wine
  • 450 g cod fillet
  • 6 sardines (deboned and headless)
  • 200 g squid
  • 200 g shrimp
  • Salt
  • Pepper

    Peel and finely chop the onion and garlic, then sauté in olive oil. Clean the leeks, carrots, and potatoes; peel the potatoes and cut everything into bite-sized pieces. Add them to the onions and cook for 5 minutes. Stir in lemon zest and juice, coriander, pepper, bay leaves, chopped tomatoes, fish stock, and wine.

    Bring to a boil and simmer over low heat for about 30 minutes. Wash, dry, and pat the fish, squid, shrimp, and sardines. Cube the cod, cut the squid into small pieces, then add all seafood to the vegetables. Cover and simmer for about 12 minutes, seasoning with salt and pepper before serving the Portuguese-style fish stew in a pot.
