Pork Tenderloin with Vegetables in Chinese Style

Ingredients

  • 500 g pork tenderloin fillet
  • 2 red bell peppers
  • 1 stalk leek
  • 1 Garlic clove
  • 150 g oyster mushrooms
  • 1 untreated orange
  • 1 tsp freshly grated ginger
  • 1 handful soy sprouts
  • sesame oil (for frying)
  • light soy sauce
  • chili sauce
  • 2 tbsp chopped coriander leaves

Instructions

    Rinse the pork tenderloin, pat dry and slice into strips. Wash, halve, clean and cut the bell peppers into strips. Clean the leek and cut into rings. Peel and finely chop the garlic. Clean the mushrooms and tear them into small pieces. Thoroughly peel and fillet the orange, catching the juice and squeezing out the remaining flesh.

    Sauté the meat in a wok or pan with 1-2 tbsp hot oil, ginger, and garlic for 2-3 minutes while stirring. Remove and set aside. Next, in the wok sauté the bell pepper strips with leek and mushrooms briefly, deglaze with orange juice and a splash of water if needed. Return the pork, sprinkle soy sprouts, and simmer while stirring for another 2-3 minutes.

    Season with soy sauce and chili sauce, fold in coriander leaves, and serve.
