Ingredients
- 4 large starchy potatoes
- 1 tbsp butter
- 250 ml milk
- truffle oil
- 600 g pork tenderloin
- 1 sprig rosemary
- olive oil (for frying)
- a splash white wine
- Salt
- black pepper (ground)

Wash, peel, quarter the potatoes and boil in salted water for about 25 minutes. Drain and mash with a potato masher. Bring milk and butter to a simmer, gradually pour over mashed potatoes, season with salt and truffle oil.

Slice the pork tenderloin into medallions, season with salt and pepper. Heat olive oil in a pan, add rosemary, and cook the steaks until they are tender pink.

Remove the meat, drain excess oil, whisk in butter, deglaze with white wine. Plate the pork on warmed plates, spoon sauce over it.
