Ingredients

  • 2 pieces salmon fillet (≈180 g)
  • Salt
  • black pepper (ground)
  • 1 tbsp Lemon Juice
  • 1 tbsp butter
  • 400 g beans
  • 2 tbsp peas (frozen)
  • 2 Tomatoes
  • 1 tbsp Olive Oil

Instructions

    Drizzle the salmon with lemon juice and season with salt and black pepper.

    Trim the beans and boil in salted water for 10–12 minutes; add frozen peas during the last 4 minutes, then drain.

    Quickly blanch the tomatoes, cool, peel, quarter, core, and slice into strips. Sauté in hot olive oil for a few minutes in a small pan, seasoning with salt and pepper.

    Pan‑sear the salmon in remaining butter, about 2–3 minutes per side until golden.

    Arrange beans and peas on a plate, place salmon on top, garnish with tomato strips, and serve immediately.
