- 1 Shallot
- 2 tbsp capers
- Pepper (freshly ground)
- ½ lemon (juiced)
- 1 tsp Mustard
- 1 tbsp freshly grated horseradish
- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar

Thinly slice the pork tenderloin on a mandoline and arrange the slices on four plates. Whisk together the olive oil, lemon juice, and mustard.
