Ingredients
- 700 g waxy potatoes
- 1 egg
- 1 Tbsp starch
- Salt
- black pepper (freshly ground)
- nutmeg
- 3 tbsp vegetable oil
- 150 ml heavy cream (at least 30% fat)
- 1 piece horseradish (about 2 cm)
- a splash lemon juice
- 250 g smoked salmon (sliced thin)
- dill sprigs for garnish

Peel, wash, and grate the potatoes coarsely. Squeeze out excess moisture with a cloth. Mix in the egg and starch, then season with salt, pepper, and nutmeg. Heat oil in a pan and spoon small portions of the potato mixture into it, flattening each patty. Fry until golden brown on both sides. Remove and drain on paper towels. Whip the cream until stiff peaks form, fold in grated horseradish, then season with salt, pepper, and lemon juice.

Plate the rösti, arrange smoked salmon slices on top, dollop a spoonful of horseradish cream, and garnish each serving with a dill sprig.
