Ingredients
- 4 pork schnitzels (pre‑cooked, 150 g each)
- Salt
- pepper (ground)
- 4 tbsp coarsely chopped herbs (rosemary, basil, thyme, parsley)
- 4 slices cheddar cheese
- 2 tbsp clarified butter
- 3 red onions
- vegetable oil
- 1 tbsp freshly chopped parsley

Preheat the oven to 180°C with fan and top/bottom heat.

Wash the meat, pat dry, season with salt and pepper, cover with herbs and 1–2 slices of cheese. Roll up, tie with kitchen twine, and brown all sides in a hot pan with melted clarified butter until golden brown. Finish cooking in the preheated oven for 10–15 minutes.

Remove the onions, slice into thin strips, and sauté in a pan with 2 tbsp hot oil until translucent. Mix in parsley and spread on plates. Remove twine from the roulades, cut into slices, and serve atop the onions.
