Pork Neck Steak with Herb Butter

Ingredients
- 2 shallots
- 4 Garlic cloves
- 1 tbsp mustard
- 4 tbsp Lemon juice
- 2 tsp lemon zest
- Tabasco
- 3 tsp thyme
- Salt
- ground pepper
- 125 ml alcohol‑free beer
- 720 g pork neck steak (4 steaks about 180 g each)
- 250 g butter
- 3 tbsp herbs (e.g., chives, parsley)
Instructions

Peel and roughly chop the shallots and garlic. Blend the shallots, one garlic clove, mustard, 1 tbsp lemon juice, lemon zest, Tabasco, 1 tsp thyme, beer, salt, and pepper into a puree. Marinate the steaks in this mixture covered for at least 4 hours or preferably overnight in the refrigerator.

Take the steaks out of the marinade, pat them dry, and grill on a hot grill for 6–8 minutes, turning once, until cooked through.

Whisk butter in a warm bowl until fluffy, then stir in remaining garlic, herbs, lemon juice, and salt. Shape the butter into a roll using plastic wrap, wrap it tightly, and refrigerate. Slice into rounds before serving.
