Pear, Beans and Kassler

Pears, beans and Kassler in a light, spicy stew: traditionally prepared with bacon, here made lean thanks to Kassler!

Ingredients

  • 3 onions
  • 1 l classic vegetable broth
  • 400 g chicken Kassler
  • 500 g green beans
  • 3 pears
  • 3 stalks bean sprout
  • Salt
  • Pepper

Instructions

    Peel and slice the onions into strips. Pour the vegetable broth into a large soup pot and bring to a boil. Add the onions and simmer over low heat for about 15 minutes.

    Meanwhile, trim, rinse, drain, and break or cut the beans into bite‑sized pieces. Add the beans to the pot and cook everything together for another 5 minutes.

    Wash, dry, peel, halve, and core the pears. Cut the pears into wedges. Rinse the bean sprout, shake dry, and pluck off the leaves. Chop the sprout. Add the pear wedges and bean sprout to the stew, simmering for about 8 more minutes. Season with salt and pepper. Slice the Kassler and add it to the broth. Taste the pears, beans, and Kassler again with salt and pepper and let it rest for 3 minutes.
