Coconut Pork Curry

Coconut pork curry from Spoonsparrow is easy to prepare and always delicious.
Ingredients
- 2 onions
- 600 g pork (e.g., top loin)
- 3 Garlic cloves
- 5 g ginger (1 piece)
- 2 tbsp Rapeseed oil
- 1 tsp ground turmeric
- 0.5 tsp cumin
- 4 cloves of cardamom
- 1 cinnamon stick
- 250 ml meat broth
- 250 ml coconut milk (9% fat)
- 3 stalks coriander
- Salt
- Cayenne pepper

Peel and halve the onions, then slice them into rings. Rinse the pork under cold water, pat dry, and cut into strips. Peel and finely chop the garlic. Peel and grate the ginger.

Heat oil in a pan. Brown the pork over high heat for 2 minutes. Add the onions, garlic, ginger, turmeric, cumin, cardamom, and cinnamon, and cook together for 3 minutes.

Pour in the meat broth and coconut milk, then simmer gently with occasional stirring for 30 minutes.

Meanwhile, wash the coriander, shake off excess water, and pluck the leaves. Season the curry with salt and cayenne pepper, then sprinkle with coriander before serving.
