Pork Loin with Rhubarb

Ingredients
- 600 g rhubarb
- 2 tbsp honey
- 1 tbsp Lemon Juice
- 3 sprigs rosemary
- 600 g pork tenderloin (trimmed)
- Salt
- ground pepper
- 2 tbsp Rapeseed oil
- 150 ml meat broth

Preheat the oven to 160°C with fan and top heat.

Wash, trim and cut the rhubarb diagonally into 1–2 cm wide pieces. Mix with honey, lemon juice and rosemary and spread in a baking dish.

Rinse the pork, pat dry and cut according to pan size. Season with salt and pepper and brown all sides in hot oil. Remove from pan and place on the rhubarb bed. Roast in the oven for about 25 minutes, adding broth if needed and basting regularly with pan juices.

Taste before serving and let the meat rest a little longer before slicing.
