Mediterranean Tortilla

Ingredients
- 250 g Cherry Tomatoes
- 200 g cooked potatoes
- 100 g peas (frozen)
- 3 tbsp olive oil
- Salt
- pepper (ground)
- 5 eggs
- 20 g freshly grated Parmesan
- 2 tbsp finely chopped basil
- basil for garnish
Instructions

Wash the tomatoes and halve them. Peel the potatoes and cut into small cubes. Thaw the peas.

Heat 1 tablespoon of olive oil in a large pan, add the potatoes, season with salt, and sauté for about 5 minutes; then remove and set aside. Whisk the eggs, then add the potatoes, tomatoes, peas, parmesan, and basil. Season with salt and pepper and mix well.

Heat the remaining oil in the pan, pour in the egg-tomato mixture, cover, and cook over medium heat for 6-7 minutes until set. Remove the Mediterranean tortilla from the pan, garnish with basil, and serve.
