Pork Fillet with Onion Apple Ragout

Ingredients
- 2 onions
- 2 Garlic cloves
- 2 Apples
- 4 pieces pork fillet (about 180 g each)
- Salt
- Pepper (freshly ground)
- 2 tbsp plant oil
- 1 tsp Honey
- 20 ml Calvados
- 200 ml meat broth
- 100 g ham (thin slices)
- sage leaf (for garnish)
Instructions

Preheat the oven to 160°C (320°F) with upper and lower heat.

Peel the onions and garlic; cut the onions into wedges. Wash, dry, peel, slice, and core the apples.

Season the pork fillet with salt and pepper and sear it in hot oil on all sides. Wrap in foil and bake in the preheated oven for 20-25 minutes.

In the same pan sauté the apple and onion wedges. Add honey and deglaze with Calvados. Add garlic, pour in meat broth, and simmer while stirring occasionally for 6-8 minutes. Season with salt and pepper.

In another pan slowly crisp the sliced ham without fat.

Plate the pork on top of the onion apple sauce, sprinkle with ham strips, and garnish with sage leaves before serving.
