Pushed Pork Roast with Cherry Tomatoes

- 1 old-fashioned roll
- 3 onions
- 800 g mixed ground meat
- 50 g green bacon cubes
- 2 Eggs
- 1 tsp Mustard
- Semmelbrösel (as needed)
- Salt
- Pepper (freshly ground)
- 300 g cherry tomatoes
- 1 tbsp freshly chopped basil (for sprinkling)

Preheat the oven to 200°C with upper and lower heat. Soak the roll in cold water. Peel the onions and dice finely. Squeeze out excess water from the roll and mix it with the ground meat, onion cubes, bacon, eggs, mustard, and Semmelbrösel. Season with salt and pepper. Transfer the mixture into a small loaf pan lined with foil and bake for about 60 minutes in the preheated oven.

During baking, wash and pat dry the tomatoes. After 50 minutes of baking, spread the tomatoes over the roast, lightly season with salt and pepper. Remove the finished roast from the oven, carefully lift it out of the pan, and arrange on a plate. Serve sliced, sprinkled with basil.
