Protein-packed and invigorating: The fiery shrimp stir-fry from Spoonsparrow is a great lunch or dinner.

Ingredients

  • 750 g raw shrimp (in shell)
  • 1 chili pepper
  • 3 tbsp olive oil
  • 1 sprig thyme
  • 1 sprig oregano
  • 2 Garlic cloves
  • 2 onions
  • 1 green bell pepper
  • 4 plum tomatoes
  • 200 ml vegetable stock (or broth)
  • 180 ml hot ketchup

Instructions

  1. 1.

Peel the shrimp and rinse them cold. Wash, halve, seed, and dice the chili pepper; add it with 2 tbsp olive oil to the shrimp. Pinch off the herbs and add them. Peel the garlic cloves and squeeze them in. Cover and marinate for about 30 minutes.

  2. 2.

Then peel and dice the onions, wash, halve, clean, and dice the bell pepper. Rinse the tomatoes under boiling water, peel them, and also cut into cubes.

  3. 3.

Heat the remaining olive oil, sauté the onions until translucent. Stir in the bell pepper and cook briefly. Add the tomatoes. Mix in the vegetable stock and Heinz hot ketchup; let everything simmer for about 10 minutes over low heat.

  4. 4.

Let a pan get very hot. Sauté the shrimp with the marinade over high heat for about 3 minutes, season with salt and pepper, add to the vegetables and bring to a boil once. Serve the fiery shrimp stir-fry. Rice pairs well with it.
