Pork Cutlet with Parmesan Crust

Ingredients
- 4 pork cutlets
- 2 tbsp flour
- 2 Eggs
- 4 Tbsp breadcrumbs
- 4 tbsp grated Parmesan
- 600 g green beans
- 2 red bell peppers
- 1 Garlic clove
- 1 bunch Basil
- olive oil
- Sea salt
- ground pepper
Instructions

Wash, trim and blanch the beans in salted water for about 5-6 minutes until just tender. Shock in cold water and drain.

Wash, halve, trim and slice the bell peppers into strips.

Wash and pat dry the cutlets. Season with pepper, dredge in flour, dip in beaten eggs, then coat with a mixture of breadcrumbs and parmesan. Fry each side in hot oil for about 3-4 minutes until golden brown.

Meanwhile, pick off basil leaves (reserve some for garnish) and blend with 3-4 tbsp olive oil. Peel and finely chop garlic; sauté in 2 tbsp oil, add beans and peppers, cook for 1-2 minutes, season with salt and pepper, then plate. Place the cutlets on top and drizzle with basil oil. Garnish with basil leaves and serve.
