Herb-Crusted Meat with Apples, Potatoes and Onions

Ingredients

  • 2 Spring Onions
  • 0.5 bunch thyme
  • 1 tbsp mustard
  • 4 tbsp olive oil
  • 4 pork chops (≈180 g each)
  • Salt
  • pepper (ground)
  • 400 g small waxy potatoes
  • 1 onion
  • 1 Garlic clove
  • 250 ml cider
  • 1 apple
  • 1 tbsp Lemon Juice
  • 1 tbsp butter

Instructions

    Clean and wash the spring onions, cut into thin rings. Pick thyme leaves and mix with mustard and 1 tbsp oil. Wash the pork chops, pat dry, season with salt and pepper, then brush with the thyme mixture; let rest for 10 minutes. Peel the onion and slice into thin wedges. Thoroughly wash the potatoes and halve them lengthwise. Heat remaining olive oil in a pan, add the potatoes and fry for 4 minutes.

    Add the pork chops and onions to the pan, sear for an additional 3 minutes over high heat. Peel and press the garlic clove into the mixture. Pour in the cider, cover, and simmer on low heat for 20 minutes. Wash the apple, remove the core, slice thinly, and drizzle with lemon juice. Just before serving, sauté the apple slices in butter, season with salt and pepper. Remove the pork from the pan, cut into two pieces, arrange with potatoes, apples and onion sauce, and serve.
