Pork Cutlet with Asparagus and Fruits

Ingredients
- 1 kg asparagus
- 4 pork cutlets
- butter
- sunflower oil
- Salt
- Pepper (freshly ground)
- 5 nectarines
- 2 Tomatoes
- lime zest (from 1 organic lime)
- 2 limes (juice)
- 1 Tbsp parsley

Wash the nectarines, halve them, pit and dice into small cubes. Wash the tomatoes, halve them, remove seeds and dice into small cubes. Mix the nectarines and tomatoes with lime juice, zest and parsley.

Wash the asparagus, trim it, cut off woody ends and blanch in boiling salted water for about 15 minutes. Drain well.

Melt 2-3 tbsp butter gently and drizzle over the asparagus.

Meanwhile pat the cutlets dry. Heat 2 tbsp oil in a pan and sear the cutlets for about 3-4 minutes per side. Season with salt and pepper. Plate the cutlets with asparagus and nectarines. Garnish with starfruit (carambola) before serving.
