Sour Pork Ribs

Ingredients
- 1 Carrot
- 100 g celery
- 100 g leeks
- 1 onion
- 125 ml vinegar
- 2 Bay leaves
- 4 black peppercorns
- 4 raw pork ribs
- 12 sheets white gelatin
- 600 g waxy potatoes (cooked the day before)
- 4 tbsp clarified butter
- Salt

Peel or wash and clean the carrot, celery, leeks, and onion. Cut into larger pieces and put in a pot. Pour 1.5 l water with vinegar over them and bring to a boil. Add bay leaves and peppercorns. Rinse the ribs and place them in the broth. Cover and simmer on medium heat for about 20 minutes.

Soak gelatin in cold water.

Finally remove the ribs and lay them flat in a dish. Strain the broth, catch it, and measure out 1 l from it. Squeeze the gelatin and dissolve it in the liquid. Pour over the ribs, cover, and let set in the refrigerator for about 4 hours.

Peel the potatoes and slice them. Fry in hot clarified butter while turning for 5-10 minutes until crispy. Season with salt and serve with the sour ribs.
