Pork Chops with Fries

- 1 kg potatoes (large and waxy)
- 1.5 l oil for frying
- Salt
- pepper (ground)
- 4 pork chops
- 1 tbsp oil
- Salad leaves
- parsley

Prepare the fryer and heat to 165°C or heat fat in a sufficiently large pot (the fat is hot enough when bubbles rise on a wooden spoon handle dipped into it).

Peel potatoes, cut into sticks, and dry well.

Add potato sticks portion-wise to the fat and cook for about 5 minutes until they are soft but still colorless; remove.

Increase temperature to 190°C, add potatoes again portion-wise and fry for about 2 minutes until crisp; remove, drain, and season with salt.

Season pork chops with salt and pepper and slowly brown them in hot oil for about 3-4 minutes per side.

Arrange salad leaves and parsley on a plate and serve the pork chops with the fries on top.
