Pork Chops with Tomato Sauce

Ingredients

  • 4 tbsp olive oil
  • 1 Shallot
  • 1 Garlic clove
  • 1 small can chopped tomatoes
  • Salt
  • Pepper (freshly ground)
  • 2 tsp cane sugar
  • 4 pork chops (~2 cm thick)

Instructions

    Peel and finely chop the shallot and garlic. Sauté in 2 tbsp hot oil in a saucepan until translucent, then add tomatoes, salt, pepper, and sugar; simmer for about 15 minutes.

    Brush the pork chops with oil, season with salt and pepper, and grill on a hot grill for about 3–4 minutes per side. Plate the chops with the tomato sauce. Serve with a fresh vegetable salad of your choice, such as chicory, zucchini slices, and mango wedges.
