Ingredients

  • 450 g mixed ground meat
  • 1 loaf roll (from yesterday)
  • 1 onion
  • 20 g butter
  • 0.5 tsp marjoram
  • 0.5 bunch Parsley
  • 2 Garlic cloves
  • 3 tbsp clarified butter
  • 2 cups Greek yogurt (300 g)
  • 0.5 cucumber salad
  • 4 Garlic cloves
  • 2 sprigs Mint
  • Salt
  • Pepper

Instructions

    Grate the crust off the loaf roll, soak it in lukewarm water. Peel and finely chop onion and garlic; sauté in butter, let cool slightly, then mix with ground meat, onions, drained roll, salt, pepper, and marjoram. Finely chop parsley and fold in. With damp hands shape 4‑cm diameter balls. Heat clarified butter and sear the meatballs all around until browned.

    Peel cucumber, cut lengthwise, scoop out seeds with a spoon and grate flesh finely. Peel garlic, press into yogurt, mix with cucumber, season heavily with salt and pepper. Spread tzatziki on a plate, add four meatballs each, garnish with squeezed mint leaves.
