Ingredients

  • 500 g starchy potatoes
  • 250 g dumpling bread
  • 200 ml milk
  • 2 Eggs
  • 2 tbsp semolina
  • 1 tbsp potato starch
  • 2 tbsp liquid butter
  • Salt
  • pepper (from grinder)
  • nutmeg
  • 1 slice ginger
  • 1 dried chili pepper

Instructions

    Step 1: Wash the potatoes and steam for about 30 minutes. Peel and press through a potato masher, then let them fully dry.

    Step 2: Place the mashed potatoes in a bowl and cover; refrigerate for at least 2 hours.

    Step 3: Put the dumpling bread in a bowl. Bring the milk to a boil, pour over the bread, and let it soak for about 10 minutes.

    Step 4: Add the soaked bread pieces to the mashed potatoes. Beat in the eggs, add semolina, potato starch, and butter. Season with salt, pepper, and nutmeg; knead into a smooth, well‑formable dough, adding more starch if needed.

    Step 5: With wet hands, shape 8 dumplings.

    Step 6: In a large pot, bring salted water with ginger and a dried chili pepper to a boil. Gently drop the dumplings in, reduce heat, and simmer for about 20 minutes.
