Poppy Seed Cookies with Lemon Curd

Ingredients
- 250 g flour
- 30 g ground poppy seeds
- 80 g sugar
- 1 Tbsp vanilla sugar
- a pinch of salt
- 160 g butter
- 100 g lemon curd (jar)
- 3 tbsp powdered sugar
- a handful of glass noodles
- oil for frying

Mix the flour, poppy seeds, sugar, vanilla sugar and salt in a bowl. Add the butter in chunks and knead everything into a smooth dough. Divide into two portions and roll each into a log about 30 cm long. Wrap in plastic wrap and chill for about 30 minutes.

Preheat the oven to 180°C fan.

Cut the logs into slices about 1 cm thick, shape them into balls and place on two baking trays lined with parchment paper. Press a small well into the center of each ball with a wooden spoon handle. Spoon lemon curd into a piping bag and pipe it into the cookie wells. Bake in the preheated oven for 10–12 minutes. Remove the cookies from the tray and cool on wire racks.

Briefly fry the glass noodles in hot oil and drain them on kitchen paper. Use them to decorate the cookies and dust with powdered sugar.
