Marzipan Chocolate Sticks
The Marzipan chocolate sticks from Spoonsparrow are perfect for gifting, bringing along, and snacking.
Ingredients
- 3 egg whites
- 150 g powdered sugar from raw cane sugar
- 150 g marzipan base
- 20 ml orange juice
- 150 g finely ground almonds
- 150 g almond flakes
- 100 g dark chocolate

Beat the egg whites with powdered sugar until stiff peaks form. Whisk the marzipan base with orange juice until smooth, then fold in the ground almonds and the beaten egg whites to create a pliable dough. Cover and chill for at least 30 minutes.

Roll the dough into a log about 1.5 cm thick, cut into 8 cm long pieces. Brush each piece with remaining egg white, roll in almond flakes, place on parchment-lined baking sheet, and bake in a preheated oven at 180 °C (160 °C fan or gas level 2–3) for about 20 minutes.

While the sticks cool, chop the chocolate coarsely and melt it over a gentle steam bath. Let it cool slightly, then dip each stick’s ends about 1 cm into the chocolate. Drain excess chocolate and set on a cooling rack to dry.
