Ingredients

  • butter (for the pan)
  • 700 g waxy potatoes
  • Salt
  • 2 Eggs
  • 250 g quark
  • 50 g flour
  • pepper (ground)
  • Nutmeg (freshly grated)

Instructions

    Preheat the oven to 180°C (356°F) with both top and bottom heating. Butter a brioche loaf pan and dust it with flour.

    Wash the potatoes and boil them in salted water for 25-30 minutes until tender. Drain, cool briefly, peel, and mash with a potato masher. Let cool slightly. Separate the eggs; beat the yolks with quark, mashed potatoes, and flour. Season with salt, pepper, and nutmeg. Whisk the egg whites to stiff peaks and fold them into the mixture. Pour the batter into the prepared pan, spread evenly, and bake in the preheated oven for about 45 minutes.

    Remove from the oven, let cool briefly, then unmold onto a plate. Serve warm or at room temperature.
