Kefir Cake

Ingredients

  • 100 g butter
  • 100 g sugar
  • 150 g flour
  • 50 g ground hazelnuts
  • 1 egg
  • 4 eggs
  • 500 ml kefir
  • 100 g sugar
  • 50 g cornstarch
  • currants
  • powdered sugar

Instructions

    Knead the chopped butter with sugar, flour, hazelnuts and the egg into a smooth, firm dough. Shape it into a ball and wrap in cling film; refrigerate for 30 minutes.

    Roll out the dough to a thickness of 1/2 cm and line a greased springform pan with it.

    Separate the eggs. Whisk kefir with sugar and yolks. Beat the egg whites into stiff peaks, fold them with the cornstarch into the kefir mixture, then pour into the cake tin. Bake in a preheated oven at 180°C for about 45 minutes until golden yellow. Remove and cool. Sprinkle powdered sugar on top and garnish with currants before serving.
