Polenta Pizza with Goat Cheese, Figs and Grapes
The Polenta Pizza with goat cheese, figs and grapes from Spoonsparrow is a successful twist on the classic.
Ingredients
- Salt
- 15 g Butter (1 tbsp)
- 150 g cornmeal (polenta)
- 1 blue fig
- 150 g seedless red grapes
- 150 g goat cheese roll (45% fat in milk)
- 150 g Sour cream
- Pepper
- 1 handful herbs (e.g., rosemary, thyme, basil; 5 g)
- pink peppercorns
- 1 tsp liquid honey

For the polenta, bring 500 ml water to a boil with 1 tsp salt and butter. Whisk in cornmeal, remove from heat and let stand for 20 minutes, stirring occasionally.

Meanwhile wash the fig and slice thinly. Wash grapes and pat dry. Slice goat cheese into rounds.

Line a baking sheet with parchment paper. Spread polenta onto it to form a round flatbread, brush with sour cream, lightly salt and pepper. Top pizza with fig slices, goat cheese rounds and grapes, then bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for 25 minutes.

While the pizza bakes, wash herbs, pat dry and strip leaves from stems. Remove pizza from oven, sprinkle with herbs and pink peppercorns, drizzle honey over it, and cut into pieces.
