Spinach and Ham Pizza

Ingredients
- 0.5 cube yeast (21 g)
- 1 pinch sugar
- 400 g flour
- 4 tbsp olive oil
- 1 tsp salt
- 1 kg tomatoes
- 1 Tbsp freshly chopped thyme
- Salt
- pepper (from grinder)
- 1 pinch sugar
- 250 g ham
- 1 handful young spinach leaves
- 125 g grated cheese (e.g., Gouda)
- olive oil (for drizzling)
- thyme (for garnish)
Instructions

Crush the yeast into a bowl, mix with sugar and about 200 ml lukewarm water until smooth. Add flour, olive oil, and salt, then knead into a supple dough. Cover and let rise in a warm place for about an hour.

Preheat the oven with baking trays to 240°C (direct heat).

Shape the dough into four balls, roll each into a 20-24 cm round on lightly floured surface, and place on parchment paper.

Briefly blanch the tomatoes, cool, peel, quarter, core, and dice. Add thyme, season with salt, pepper, and sugar. Dice the ham and mix into the tomato mixture. Wash and drain the spinach well.

Spread the tomato mixture over the pizza bases, leaving a 1 cm border. Sprinkle with ham, cheese, and spinach, drizzle lightly with olive oil, then place on the hot trays with parchment paper. Bake in the preheated oven for 10-15 minutes until golden brown, then serve.
