Oven-Baked Pizza with Sardines and Tomatoes

Ingredients

  • 500 g tomatoes
  • olive oil
  • 1 Garlic clove
  • Sea salt
  • pepper (ground)
  • 150 g ready-to-eat sardine fillets
  • 80 g capers (with stems)','Lemon juice (for drizzling)','0.5 cube fresh yeast (21 g)','200 g whole wheat flour','200 g wheat flour','1 tsp salt','3 tbsp olive oil','Flour (for the work surface)

    Wash, halve, and remove stem ends and seeds from the tomatoes for the topping. Halve the garlic clove and rub a baking sheet with it, then brush the sheet with olive oil. Arrange tomato halves on the sheet, season with salt and pepper, and drizzle lightly with olive oil. Bake in the oven (middle rack) at 200 °C fan-forced for about 1 hour. Remove and set aside.

    For the dough, stir the yeast into about 200 ml lukewarm water until smooth. Mix flour and salt in a bowl, create a well in the center, pour in the yeasted water and oil, then knead with hands or an electric hand mixer’s beaters into a smooth dough. Knead vigorously on a floured surface for ~10 minutes, cover, and let rise in a warm place for about 1 hour.

    Preheat the oven to 240 °C with upper and lower heat. Pull sardines into bite-sized pieces, season with salt, pepper, and lemon juice. Drain capers. Knead the dough again on a floured surface, divide into four equal portions, roll each into an oval flatbread, and place on parchment-lined trays. Bake in the preheated oven on the lower rack for 10 minutes. Remove, top with baked tomatoes, sardine pieces, and capers, then bake for another ~5 minutes. Let cool slightly and serve warm.
