Ingredients
- 125 g dark chocolate couverture
- 40 ml pear brandy
- 2 Tbsp whipping cream
- 4 pears
- Lemon (juice)
- 500 ml dry white wine
- 150 g sugar
- 1 tsp fresh grated ginger
- 0.5 cinnamon stick
- 1 piece untreated lemon zest
Instructions

Peel the pears and immediately drizzle with lemon juice.

Reduce the wine, sugar, ginger, cinnamon and lemon zest to a syrupy consistency. Poach the pears in the liquid for 5 to 8 minutes, depending on ripeness, then let them cool in the broth.

Crush the chocolate and melt it with the pear brandy and cream over low heat while stirring.

Arrange the pears on plates.

Stir the chocolate sauce well and pour it over the pears.
