Poached Beef Fillet

Ingredients
- 3 Carrots
- 3 stalks of celery
- 1 leek
- Salt
- a handful of parsley
- 1 kg beef fillet (pre-cut)

Wash, clean or peel the carrots, celery, and leek, then roughly dice half of each. Cut the other half into fine strips as garnish.

Place the diced vegetables in a large pot with salted water. Add the trimmed parsley. Let it steep for about 10 minutes, skimming all aromatics from the broth with a slotted spoon. Place the beef fillet in the liquid and cover; poach at about 80°C for roughly 20 minutes. After 5-10 minutes add the vegetable strips.

Remove the cooked meat from the broth, let it rest for a few minutes, then slice into rounds. Arrange on a plate with the vegetables. Season with salt and pepper and drizzle with some of the cooking liquid.
