Plum Marzipan Cake

Ingredients

  • soft butter (for the pan)
  • soft flour (for the pan)
  • 125 g soft butter
  • 100 g sugar
  • 2 tbsp vanilla sugar
  • 100 g marzipan raw mass
  • 3 eggs
  • 2 tbsp almond liqueur
  • 300 g flour
  • 1 tsp ground cinnamon
  • 2 tsp Baking powder
  • 750 g plums
  • 2 tbsp coarse brown sugar

Instructions

    Preheat the oven to 175°C fan. Grease and dust the cake pan with butter and flour.

    Cream the butter with the sugar. Stir in the finely chopped marzipan. Add the eggs and liqueur, whisk until frothy. Mix in the flour with cinnamon and baking powder, fold into the batter. Pour the dough into the pan and smooth the surface.

    Wash the plums, halve and pit them. Arrange them in concentric circles from outside to inside on the dough, pressing lightly. Sprinkle with brown sugar and bake for about 45 minutes (test with a skewer).
