Ingredients

  • 1 kg ripe plums
  • 100 g coconut palm sugar
  • 2 Cinnamon sticks
  • 1 star anise
  • 2 cloves
  • 300 ml apple juice

Instructions

    Wash the plums, halve them and remove the pits. Mix with the coconut palm sugar and spices, then let steep for 2 hours. Afterward transfer to a pot and heat. Add the apple juice and 500 ml water, and simmer over medium heat for 25–30 minutes.

    Strain the liquid through a fine sieve, squeezing the fruit well, and pour the juice into a bottle rinsed with hot water. Seal and let cool thoroughly.
