Plum Jam

Ingredients

  • 1 kg ripe plums
  • 1 lemon
  • 400 g coconut palm sugar
  • 2 tsp agar-agar

Instructions

    Clean, wash, halve, pit, and quarter the plums lengthwise. Squeeze the lemon and add its juice along with coconut palm sugar to the fruit; mix well and let sit for at least 1 hour.

    Heat water in a pot and sterilize jars by boiling them for 10 minutes. Bring the plum mixture to a gentle boil while stirring, add agar-agar, and simmer for 5 minutes until bubbling.

    Perform a gel test by placing a small amount of jam on a cold plate; if it sets firmly, fill the hot jars to the rim, seal tightly, and invert them for 10 minutes. Then turn them upright and allow to cool.
