Plum Ginger Jam

Ingredients

  • 1000 g plums
  • 100 g black currants
  • 10 g fresh ginger
  • 1 packet powdered gelatin (for 1 kg fruit)
  • 500 g canning sugar
  • 4 tbsp Lemon juice

Instructions

    Wash the plums, halve them, remove pits and cut into small pieces. Wash the currants and strip off the stems. Peel the ginger and slice it thinly.

    Mix the gelatin powder with 2 tbsp sugar, then combine with the fruit, ginger and lemon juice in a pot and heat slowly.

    Once the mixture boils, add the remaining sugar and simmer for 1 minute while stirring constantly. Transfer to prepared jars and seal with screw caps.
