Chocolate Almond Cookies

Chocolate almond cookies, also known as Basler Brunsli, are a hit on any cookie platter. This recipe is from Spoonsparrow.

Ingredients

  • 100 g Dark chocolate (at least 70% cocoa content)
  • 150 g powdered sugar made from raw cane sugar
  • 1 pinch cinnamon
  • 1 pinch ground cloves
  • 300 g ground almonds
  • 2 tsp cocoa powder
  • 2 egg whites
  • 1 pinch salt
  • 2 tbsp wheat flour type 1050 (for working)

Instructions

    Chop the chocolate and melt it in a double boiler. Mix powdered sugar with cinnamon, cloves, almonds and cocoa. Whisk the egg whites with salt until stiff peaks form and gradually fold into the almond mixture. Add the melted chocolate and work into a firm dough. Shape a ball, wrap in plastic film and refrigerate for about 1 hour.

    Roll out the dough on a floured surface to about 1 cm thickness and cut shapes with various cookie cutters. Place on parchment-lined baking trays and let dry overnight.

    Bake the cookies in a preheated oven at 200 °C (convection 180 °C; gas: level 3) for about 7 minutes.
