Ingredients
- 1 kg plums
- 500 g jam sugar (2:1)
- 0.5 tsp cinnamon powder
- 1 pinch ground cloves
- 1 tsp lemon juice

Preheat the oven to 180°C fan.

Wash, dry, and pit the plums. Blend with a stick blender until smooth, then mix in the jam sugar, cinnamon, cloves, and lemon juice.

Transfer the mixture into a baking tin and bake for about 2 hours, stirring every 30 minutes.

After baking, fill clean, hot-washed jars with the compote and seal tightly. Place the jars upside down for about 10 minutes, then flip them back over to cool.
