Orange Marmalade

Ingredients
- 800 g oranges (unprocessed)
- 1 lemon (juiced)
- 1 kg gelatine sugar
- 40 ml brown rum
- 5 drops essential orange oil (natural)
- 50 g sugar
- 1 cinnamon stick

Wash oranges hot, pat dry, remove stem ends and slice half of the oranges into thin rounds with a vegetable peeler. Remove seeds, peel the rest of the oranges thoroughly with a sharp knife removing the white pith. Cut fruit fillets from the separating skins and catch the released orange juice. Squeeze juice from the remaining orange parts. Add the orange slices to 1/2 l hot water with the orange fillets, cover and let steep for 4 hours.

Weigh the mixture, weigh equal amounts of gelatine sugar in a separate bowl and set aside. Place 50 g sugar in a pot and caramelize, pour in orange liquid while stirring and add the remaining orange mixture with the cinnamon stick. Bring to boil, remove from heat and let stand for 15 minutes, remove cinnamon stick.

Stir gelatine sugar into the mixture, bring to a boil once and cook open for about 5 minutes, perform a gel test on a plate. Add orange oil, fill hot marmalade into twist‑off jars up to the rim, invert for 10 min onto the lid, flip over and let cool.
