Plum Cake

Ingredients
- 300 g wheat flour
- 200 g buckwheat flour
- 1 cube yeast
- 1 tsp sugar
- 0.25 l water
- 200 g tofu
- 1 pinch salt
- fat (for greasing the baking tray)
- 1.5 kg plums
- 100 g honey
- 0.125 l plum juice

Mix the flours in a bowl, press a well in the center and crumble the yeast into it. Sprinkle sugar over the mixture. Stir tofu with water and warm to lukewarm. Take 4 tbsp of this mixture, pour over the yeast and dust with some flour. Cover and let rise for 15 minutes. Add the remaining lukewarm tofu mixture and salt, knead well until the dough bubbles, then cover and let rise for 1 hour.

Wash, halve and pit the plums. Roll out the dough on a greased baking tray, form a border and arrange the plums in a scalloped pattern. Bake in an oven at 180°C for 40 minutes, remove and cool. Mix honey with plum juice, warm it and spread over the plums.
