Plum‑Peach Tart

Ingredients
- 200 g Flour
- 1 tsp Baking powder
- 50 g sugar
- 1 Egg white
- 125 g cold butter (cut into small pieces)
- 750 g plums
- 1 peach (or nectarine)
- 50 g sugar

Preheat the oven to 200°C.

Quickly knead all dough ingredients together, shape into a ball and wrap in foil; chill for about 30 minutes. Meanwhile wash the plums, halve them and remove pits. Peel the peach, halve it, remove the pit and cut the flesh into strips. Roll out the dough on a floured surface, line a buttered tart pan with it, shaping the edge as well. Prick the bottom of the pan with a fork several times. Arrange the plums on top in a brick‑like pattern from the outside in; place the peach strips ring‑shaped inside. Sprinkle the fruit with about half the sugar and bake in the preheated oven for approximately 40 minutes. Remove, let cool slightly, then dust with the remaining sugar before serving. Whipped cream pairs nicely.
