Zwetschgendatschi

Ingredients
- 20 g fresh yeast (1/2 cube)
- 200 g sugar
- 0.2 l lukewarm milk
- 400 g flour
- 1 pinch salt
- 1 egg
- 75 g melted butter
- butter (for greasing the pan)
- 50 g sponge cake crumbs (or breadcrumbs as an alternative)
- 2 kg ripe plums

Dissolve the yeast and 1 tablespoon of sugar in the milk and let it sit covered for 15 minutes. Mix half the flour, the salt, the egg, and 75 g of sugar with the yeasted milk and melted butter. Gradually knead in the remaining flour. Cover the dough and leave it to rise in a warm place for about 45 minutes until it has roughly doubled in volume. Preheat the oven to 200°C fan.

Knead the dough again vigorously. Grease a baking sheet with butter and roll out the dough onto it, forming a small edge. Sprinkle with the crumbs. Wash, halve, and pit the plums.

Arrange the plum halves cut-side up on the dough in a roof‑tile pattern. Sprinkle with the remaining sugar. Place the cake in the preheated oven (middle rack) and bake for about 45 minutes (check with a skewer). Serve the finished cake sliced while still warm or cold.
