Ingredients

  • 150 g flour
  • 1 tsp salt
  • 1 egg yolk
  • 2 tsp sunflower oil
  • flour (for dusting)
  • 70 g butter
  • 30 g breadcrumbs
  • 400 g tart apples (e.g., Boskop)
  • 1 tbsp Lemon Juice
  • 400 g plums
  • 40 g chopped hazelnuts
  • 0.5 tsp ground cinnamon
  • 3 tbsp sugar

Instructions

  1. 1.

    Weigh and prepare all ingredients.

  2. 2.

Mix flour with salt in a bowl, make a well in the center, add egg yolk and oil.

  3. 3.

Gradually add water until a firm dough forms.

  4. 4.

Knead the dough for about 10 minutes and then let it rest.

  5. 5.

Shape the dough into a ball, place on a floured board, cover with a preheated bowl and let rest for about 30 minutes.

  6. 6.

Preheat the oven to 200 °C (392 °F) with upper and lower heat.

  7. 7.

Roll out the dough thinly on a lightly floured kitchen towel.

  8. 8.

Stretch the dough thin over the back of your hand.

  9. 9.

Brush the dough with melted butter.

  10. 10.

Sprinkle breadcrumbs in a thin layer over the dough.

  11. 11.

Peel, quarter, core the apples, cut into small pieces and mix with lemon juice.

  12. 12.

Wash, halve, pit the plums and cut them small. Mix both fruits with nuts, cinnamon and sugar, then spread on the dough.

  13. 13.

Fold in the side edges and quickly roll up into a strudel using the kitchen towel as aid.

  14. 14.

Place the strudel in a greased baking tin and brush again with melted butter.

  15. 15.

Bake in the preheated oven for about 40 minutes, brushing with remaining butter during baking.

  16. 16.

Remove the finished strudel from the oven, let it rest briefly, dust with powdered sugar and serve sliced warm or cold.
