Plated Plum Cheesecake

Ingredients
- 400 g flour
- 200 g butter
- 2 tbsp sugar
- 1 pinch salt
- 1 egg
- 1.5 kg plums
- 300 g Low-fat quark
- 200 g cream cheese (0.2% fat)
- 125 g sugar
- 1 pinch salt
- 60 g potato starch
- 125 g light cream
- 2 tsp lemon zest
- 5 egg yolks
- powdered sugar
- butter (for the pan)
Instructions

Sift flour onto a work surface, mix in sugar and salt, then create a well in the center. Cut cold butter into small pieces and place around the well; add the egg, about 2–3 tablespoons of water, and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a ball, wrap in plastic film, and chill for about 30 minutes.

Wash and pit the plums. In a bowl whisk quark with cream cheese, sugar, salt, potato starch, light cream, lemon zest, and egg yolks until smooth.

Grease the baking sheet well.

Roll out dough on lightly floured surface and line the sheet pan, forming a small edge. Spread the quark mixture evenly over the dough. Arrange plums on top. Bake in preheated oven at 180°C (mid) for about 40 minutes. Remove cake, dust with powdered sugar, cut into pieces, and serve with whipped cream.
