Ingredients
- 6 hard‑boiled eggs
- 100 g mixed fresh sprouts
- 1 tbsp white balsamic vinegar
- 1 egg yolk
- 1 tsp medium‑hot mustard
- 150 ml plant oil
- Salt
- ground pepper
- a splash of lemon juice
- watercress for garnish
Instructions

Peel the eggs and cut them lengthwise in half. Wash the sprouts, dry by shaking, and arrange them on a plate mixed with vinegar. Place the egg halves on top (cut side up). Beat the yolk with mustard in a blender.

Add the oil drop‑by‑drop at first, then in a thin stream until a homogeneous mixture forms. Season the mayonnaise with salt, pepper, and lemon juice, fill it into a piping bag with a small nozzle, and spray small dots onto the egg halves. Serve garnished with herb leaves.
